This small round aubergine is great in curries as the skin is edible and so easy to prepare. The raw fruit can have a bitter taste, but becomes tender when cooked and develops a rich, complex flavour.
These Baby Aubergines should be firm with a smooth skin. Avoid those with soft spots or brown patches.
