Avocados are the famous raw ingredient of Guacomole sauce. Varieties include Bacon, Fuerte, Hass and Pinkerton. All have a creamy and buttery texture, but different characteristics with respect to skin and flavour. The most prominent variety is the Hass due to its tolerance in shipping and handling, and extended seasonality. It has a sweet and smooth flesh with nutty undertones.
