    This vegetable, also known as Luffa or Chinese Okra, is harvested before maturity and resembles a ridged cucumber. The flesh has a creamy white and spongy texture.

    Select dark green coloured Turiya with a firm flesh. It is available year round from the Dominican Republic and Ghana.
